When we were given a whole snapper by Tony, we had to do it justice and cook it well. This what we did....
Roast Whole Snapper
Cut 2 slits in one side of the fish. Drizzle in olive oil and sprinkle with salt, pepper and sesame seeds, then cover and bake until barely cooked (20 - 30 minutes).

Meanwhile, make a sauce by simmering oil, soy sauce, fish sauce, garlic, ginger, chilli jam and water until fragrant.
The fish is best served on a bed of steamed rice (which collects and absorbs the juices from the fish), surrounded by sliced omelette, fried spanish onion, tomatoes, lettuce and cucumber. Drizzle the fish with the sauce and top with fried shallots.
The best way to eat it is to each take a fork and pick the meat from the top side of the fish, avoiding the bones, then peel away the backbone and keep eating. Don't forget the cheek and forehead, the sweetest part of the fish!
